- 2 garlic cloves, chopped
- 1/2 medium bell pepper, chopped
- 1 medium onion, chopped
- 1 zucchini, chopped
- 2 yellow squash, chopped
- 1 to 2 c. canned tomatoes
- 3/4 c. Minute rice
- salt and pepper to taste
- 1 (8 oz.) can tomato sauce
Directions

1In a skillet, place a very small amount of oil or spray with nonstick spray.

2Saute garlic, bell pepper and onion until tender. Add zucchini and yellow squash.

3Add tomatoes and sauce and cook 5 minutes on medium-low heat.

4Add Minute rice and cover.

5Simmer 20 minutes or until rice is tender.

6Salt and pepper to taste.
