  • 2 medium onions, chopped
  • 1 clove garlic, minced
  • 3 Tbsp. olive oil
  • 2 small zucchini, cut into 1/2-inch slices
  • 2 tomatoes, diced (can use canned tomatoes)
  • 2 small eggplant, chopped
  • 1 green pepper, chopped
  • 1 bay leaf
  • little oregano
  • mushrooms and any other vegetables (optional)

    Cook garlic and onions in oil until tender.

    Add vegetables and bay leaf.

    Add salt, pepper and a little oregano.

    Bring to a boil and simmer 30 minutes.
