- 3 Tbsp. olive oil
- 2 small zucchini, cut into 1/2-inch slices
- 2 tomatoes, diced (can use canned tomatoes)
- 2 small eggplant, chopped
- 1 green pepper, chopped
- 1 bay leaf
- little oregano
- mushrooms and any other vegetables (optional)
Directions

1Cook garlic and onions in oil until tender.
