- 1/3 c. olive oil
- 3/4 c. onion
- 2 cloves garlic
- 4 green peppers
- 2 1/2 c. peeled, diced eggplant
- 3 c. zucchini
- 2 c. chopped tomatoes
- salt and pepper
- parsley
Directions

1In medium saucepan with lid, saute onions and garlic in olive oil.

2Remove/discard onions and garlic.

3Add, in layers, remaining ingredients to saucepan.

4Sprinkle with olive oil.

5Cover and simmer over very low heat, 35 to 45 minutes.

6Uncover and heat 10 minutes.

7Serve over pasta, rice or couscous.
