- 2 Tbsp. olive oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 medium eggplant, peeled and cut into small chunks
- 3/4 c. green bell pepper slices
- 2 medium tomatoes, chopped
- 2 Tbsp. chopped fresh basil or 1 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 1 Tbsp. capers
Directions

1Heat oil in skillet. Add the onion and garlic; stir-fry over medium-high heat about 2 minutes. Add the eggplant and stir-fry another 2 minutes. Add the zucchini, green pepper and tomatoes; stir-fry 3 minutes more. Add basil, salt and ground pepper. Cover and simmer 30 minutes over low heat. Uncover; stir gently and simmer 10 minutes. Add capers. Serve hot. Serves 6.
