- 10 oz. can whole tomatoes
- 1 chicken bouillon cube
- 2 Tbsp. parsley
- 1 Tbsp. oil
- 1 bay leaf
- red pepper flakes (optional)
Directions

1Dice onions.

2Chop garlic.

3Heat onions and garlic in a pot with 1 tablespoon oil.

4Chop green pepper, zucchini and eggplant. Add green pepper and cover.

5Cook for 5 minutes.

6Add zucchini and eggplant; cover.

7Cook for 5 minutes.

8Add remaining ingredients and cook uncovered for 30 minutes.
