- 1 large onion, diced
- 2 medium zucchini, thinly sliced
- 2 Tbsp. oil
- 2 cans (16 oz.) stewed tomatoes
- 1/2 tsp. pepper
- 1 1/2 c. Minute Rice
- 1/2 c. grated Parmesan cheese
Directions

1Cook and stir onion and zucchini in hot oil in skillet until tender.

2Add tomatoes and pepper.

3Bring to boil; reduce heat. Cover and simmer 5 minutes.

4Stir in rice and cheese; cover. Remove from heat.

5Let stand 5 minutes.
