Raw Apple Cake

Ingredients

  • 2 c. sugar
  • 1 1/2 c. cooking oil
  • 3 eggs
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 c. all-purpose flour
  • 1 tsp. vanilla
  • 2 c. coconut (Angel Flake)
  • 3 c. raw apples, chopped (about 3 medium sized apples)
  • 1 c. dates, chopped
  • 1 c. nuts, chopped

Directions

    Cream together sugar and oil.

    Add eggs; beat well.

    Add the dry ingredients.

    Mix.

    Add vanilla, coconut, dates, apples and nuts.

    Pour into a greased and floured 10-inch tube pan or use 3 small loaf pans.

    Bake at 325° for 1 1/2 hours or until done (usually a little over 1 hour if pans ar small).
