- 1 c. firmly packed thinly sliced tart apples, peeled
- 1 c. sugar
- 1 egg white
- 1 Tbsp. lemon juice
Directions

1Combine all ingredients in large bowl.

2Beat at low speed of mixer until apple is finely chopped.

3Increase speed to high as icing thickens and beat until icing is thick and smooth, about 5 minutes.

4Spread on cake.

5This icing is best served the same day it is made.

6Yields sufficient icing for two (8-inch) layers or 1 (13 x 9 1/2-inch) sheet cake.
