- 1 small fryer, cut up
- salt
- pepper
- cayenne
- 1 Tbsp. squeezed garlic
- 1/2 lb. lard
- flour
Directions

1Wash chicken pieces and pat dry.

2Sprinkle each piece with salt, pepper, cayenne and garlic and rub it in.

3Cover and refrigerate for at least 2 to 3 hours before cooking.

4Heat the lard in a large iron skillet to 375° or until it just starts to smoke lightly.

5Just before frying, dredge pieces lightly in flour and fry 2 to 3 pieces at a time.

6Breasts take 12 to 15 minutes, drumsticks and backs 9 to 10 minutes.

7Pieces can be kept warm in a 200° oven while frying others.
