- 1/2 c. olive oil
- 1 c. flour
- 3 c. chopped onion
- 2 c. chopped bell pepper
- 1 c. chopped green onion
- 1 c. chopped parsley
- garlic to taste
- salt and pepper to taste
- 3 c. water
- 2 cans pintos or red beans
- 2 lb. sausage
- 3 cooked and diced chicken breasts
Directions

1Stir olive oil and flour on low fire for 45 minutes to 1 hour. Wait until it is a chocolate brown color, then add chopped onion, bell pepper, green onion and parsley.

2Sprinkle garlic, salt and pepper to taste.

3Then add water, pintos, sausage and chicken. Serve over rice.
