- 2 lb. little red beans
- 1 envelope chili mix
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 lb. ground beef
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. oregano
- 8 oz. can tomato sauce or 1 c. tomato juice
- 2 tsp. ginger*
Directions

1Cover beans with water (1 cup beans to 2 cups water).

2Add salt, pepper and ginger; cook approximately 2 hours, until tender. If you soak the beans in water overnight, it will reduce cooking time.

3Saute beef, onion and garlic.

4Add chili mix, oregano and tomato sauce or juice.

5Mix well, then add to beans.

6Simmer 1 hour.
