  • 1 pkg. smoked sausage, diced
  • 2 onions, diced
  • 1 pkg. dry kidney beans
  • 4 Tbsp. Creole seasoning (I use Tony Chachere)
  • 1/2 bell pepper, diced

Directions

    Simmer beans in water.

    After 1 1/2 hours, add onions, bell pepper, seasoning and sausage.

    Add water as required.

    Adjust seasoning as needed.
  5. 5
    When beans are tender, start cooking rice. Serve over cooked white rice.
