- 2 c. red beans
- 1 piece garlic, chopped
- 1 medium onion, chopped
- salt and pepper to taste
- 3 Tbsp. Crisco
- optional meats added to beans (cooked sausage or ham, chunk size or hot link sausage)
Directions

1Sort through beans, picking out and throwing away the bad ones. Put beans in pressure cooker pot and cover with water 2 inches above beans.

2Bring to a boil.

3Shut off burner and let beans sit for an hour.

4Drain water and add fresh water to an inch above beans.

5Add garlic, onion, seasonings, meat and 3 tablespoons Crisco shortening.

6Cover with lid and cook on 15 pounds of pressure for 20 minutes.

7Serve over cooked rice.

8Add some cornbread for a delicious Southern meal.
