Ingredients
- 2 lb. dried beans
- 1 bunch parsley, chopped
- 2 c. chopped yellow onions
- 1 bunch green onions, chopped
- 4 cloves garlic, chopped
- 2 c. ham (chopped) hambone
- 3 qt. cold water
Directions

1Soak beans overnight.

2Drain.

3Put beans in an 8 to 10-quart pot.

4Add enough cold water to cover the beans.

5Add onion and garlic and bring to a boil.

6Cook 1 hour, then add all the other things and more (hot) water if necessary.

7Simmer for 2 hours or until beans are soft.

8Remove 2 cups of beans without juice and mash very good.

9Return to pot and stir.

10Add more water if you like lots of juice.

11Always use hot water to add.

12Serve over rice.
