Cod And Watercress Soup

Ingredients

  • 3 cups vegetable or fish stock
  • 1 None medium leek, trimmed and sliced into thin rings
  • 1/2 tsp red chili flakes
  • 1 lb skinless cod fillet, cut into chunks
  • 2 bunches mustard and/or watercress, roughly chopped
  • 1 tsp lemon juice

Directions

    Bring the stock to a boil. Add the leeks and simmer for 5 mins. Add the chili flakes and cod, cover and simmer for about 5 mins until the cod is just cooked. Add the greens and lemon juice. Season to taste and serve in warmed bowls.
