- 1 lb. dry red beans
- 2 large onions, chopped
- 2 stalks celery, chopped
- 1 medium size chopped green pepper
- 1 clove garlic, minced
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. chopped parsley
- hot rice, cooked
- 2 lb. smoked sausage
Directions

1Wash beans.

2Combine red beans, celery, green pepper, onions and garlic in a large pot.

3Cover with water and bring to a boil. Reduce heat and simmer 2 1/2 hours until beans are tender and have a thick gravy.

4Add pepper, parsley and salt.

5Cook sausage according to package directions, cutting into serving pieces.

6Put rice over beans and add sausage.

7Serves 8 to 10.
