Ingredients
- 1 lb. dry Baize red beans.
- 1 large chopped onion
- 1/4 c. chopped parsley
- 1 lg. clove minced garlic
- bay leaf
- 1 lb. Ziegler's plantation smoked sausage (sliced in bite size pieces)
- salt & red pepper to taste
- 1/4 c. vegetable oil
- 1/3 c. flour
- cooked rice
Directions

1Rinse red beans and pour into a large pot of boiling water. Remove from heat cover and let stand until cool.

2Return to heat and cook slowly.

3Add chopped onion, parsley, garlic, bay leaf, salt & pepper and sausage to beans.

4When beans are tender stir in dark roux made by using vegetable oil and flour.

5Cook slowly 20-30 minutes until it's a dark brown color, stirring often. Allow beans to cook about 30 minutes more. Serve hot over rice.
