- 1 1/2 c. sugar
- 1 c. oil
- 1 1/2 c. drained, mashed, cooked beets
- 2 sq. (1 oz. each) unsweetened chocolate, melted
- 1 1/2 tsp. baking soda
- 1 tsp. vanilla
- 3 eggs
- 1 3/4 c. flour
- 1/2 tsp. salt
Directions

1Cream thoroughly sugar and eggs in a large bowl of mixer.

2Add oil, beets and melted chocolate; blend well.

3Sift together flour, soda and salt.

4Add to beet mixture; mix well.

5Pour into 2 well-greased and floured 9-inch cake pans.

6Bake in preheated 350° oven for 20 to 25 minutes.

7Cool.

8Ice with Creamy Chocolate Frosting.
