Ingredients

  • 4 medium onions, diced
  • 2 Tbsp. margarine
  • 8 oz. bacon
  • 1/4 c. sugar
  • 2 large apples, peeled and sliced
  • 1/2 c. dry red wine
  • 3 lb. red cabbage, sliced thin
  • 1 tsp. salt
  • dash of pepper
  • juice and peel of 1/2 lemon
  • 1/4 c. red wine vinegar
  • 1/8 tsp. cloves
  • 1 bay leaf
  • 1 tsp. caraway seed
  • 1 large potato, grated

Directions

    Saute onions, bacon and margarine.

    Add sugar and continue cooking until onions are golden.

    Add apples and wine; bring to a boil.

    Stir in remaining ingredients, except potato.

    Cover; simmer 20 minutes.

    Stir in potato; cook 5 minutes more.
