- 1 head red cabbage (about 3 lb.)
- 2 Tbsp. sugar
- 3 Tbsp. butter or margarine
- wine vinegar
- salt and pepper
- 1 chopped apple (tart, like Granny Smith; optional)
- 1 tsp. caraway seed (optional)
Directions

1Trim cabbage and chop or shred.

2Wash well and drain.

3Melt butter in large pot and add sugar.

4Fry until golden brown. Quickly throw in cabbage (stand back because it may splatter a little).

5Toss cabbage.

6Add 2 tablespoons vinegar, caraway seed, apple, salt and pepper to taste and just enough water to prevent burning.

7Simmer slowly, adding a little more water if necessary. Adjust seasonings; cabbage should have a sweet-sour flavor; add more sugar and/or vinegar to suit.

8Simmer for approximately 30 to 40 minutes to allow flavors to blend.

9This dish improves greatly with each reheating.
