- 2 lb. red cabbage, sliced thin
- 2 cooking apples, peeled and chopped
- 1/2 c. wine vinegar
- 1/2 c. water
- 1/4 c. butter or margarine
- 1/4 c. brown sugar, packed
- 1 to 1 1/2 tsp. salt
- 1/2 c. red currant jelly
- red food color
Directions

1Wash red cabbage and slice very fine in large pot.

2Mix cabbage, apples, vinegar, water and butter plus red food color (about 1 teaspoon).

3Cover pot.

4After 1/2 hour, add sugar; mix well, cover and simmer for the rest of time, another 1 to 1 1/2 hours or until cabbage is tender.

5When cabbage is done, add red currant jelly and cook for 10 more minutes.

6The flavor should be sweet and sour.

7Serves 6 to 8.
