  • 1 pound, 1-23 ounces, weight Chicken Breast Or Thigh
  • 1 Tablespoon Flour
  • 1 Tablespoon Soy Sauce
  • Freshly Ground Black Pepper, To Taste
  • 2 Tablespoons Red Curry Paste
  • 1 can Coconut Milk
  • 1 Tablespoon Peanut Butter
  • 1 Tablespoon Fish Sauce

    Cut the chicken into strips and mix with the flour, soy sauce and some freshly ground pepper.

    Fry the chicken in batches till partially cooked and browned, and remove from pan/wok.

    Add the curry paste to the hot wok and fry for 2 minutes.

    Add in the coconut milk, peanut butter and fish sauce and stir.

    Return chicken to the pan and cook until chicken is cooked.
