Red Clam Sauce

Ingredients

  • 2 c. chopped canned baby clams with juice
  • 1 small onion, chopped
  • 1/4 c. olive oil
  • 1/4 c. butter
  • 2 cloves fresh minced garlic
  • 1 Tbsp. dried parsley flakes
  • 1/2 c. white wine (optional)
  • 2 small cans tomato sauce
  • 1/2 tsp. salt to taste
  • 3/4 tsp. fresh ground pepper to taste

Directions

    Saute clams in oil and butter mixture for 2 minutes; add garlic, onions and parsley to clams.

    Saute for 2 more minutes; add wine, parsley and tomato sauce.

    Salt and pepper to taste. Cook on low heat (simmer for 10 to 15 minutes).

    Serve hot over linguine or spaghetti.

    Serves 2 to 4, depending on desired amount of sauce your guests like.
