Ingredients
- 1 tablespoon grapeseed oil
- 1/2 medium onion, cut into 1/2 inch chunks
- 1/3 cup red curry paste (or to taste)
- 14 ounces coconut milk
- 1 large head cauliflower, cut into florets
- 1/2 cup thinly sliced green onion
- 1/4 cup fresh cilantro, chopped
- 1/4 cup chopped peanuts
Directions

1Heat oil in large saucepan over medium heat.

2Add onion and cook, stirring, until light golden.

3Add curry paste and cook, stirring, another couple of minutes.

4Add coconut milk and bring to a boil.

5Add cauliflower and return to a boil.

6Reduce heat to medium low, cover and simmer until cauliflower is tender, about 15 minutes.

7Stir in green onions.

8Transfer to serving dish and sprinkle with cilantro and peanuts.

9Serve with jasmine rice (or whatever rice you choose).
