  • 1/2 c. shortening
  • 1 3/4 c. sugar
  • 1 tsp. vanilla
  • 3 eggs, separated
  • 2 1/2 c. sifted cake flour
  • 1/2 c. cocoa (regular type, dry)
  • 1 1/2 tsp. soda
  • 1 tsp. salt
  • 1 1/2 c. cold water

    Preheat oven at 350°.

    Cream the shortening and 1 cup of sugar until light. Add vanilla and egg yolks, one at a time, beating well after each.

    Sift together dry ingredients.

    Add to creamed mixture alternating with cold water, beating after each addition. Beat egg whites until soft peaks form.

    Gradually add 3/4 cup sugar, beating until stiff peaks form. Fold into batter; blend well.

    Bake in 2 greased and lightly floured 8 x 1 1/2-inch round pans at 350° for 35 to 40 minutes.
