- 1 lb. red kidney beans
- 1/2 lb. ham or other meat
- 8 to 10 c. water
- 1 onion, chopped
- 1 clove garlic
- 1/2 stalk celery, chopped
- 2 Tbsp. parsley
- 2 bay leaves
- meat drippings
- salt to taste
Directions

1Cook beans in a large pot, covered; cook on low.

2Add ham or other seasoning meat to beans.

3In meat drippings, saut onions, garlic, celery, parsley and bay leaves; add to beans and cook for 1 1/2 to 1 3/4 hours.

4Add water if necessary while cooking.

5Cook until done. Serve over rice and serve.
