  • 1 pound dried red lentils
  • 6 cups water
  • 16 cloves roasted garlic, peeled
  • 1 tablespoon olive oil
  • 4 teaspoons lemon juice
  • 1 1/2 teaspoons ground cumin
  • 1 tablespoon salt
  • Freshly ground pepper to taste
  • 2 tablespoons minced parsley

    Place lentils and water in a large saucepan.

    Bring to a boil.

    Reduce to a simmer.

    Cook, stirring occasionally, until the lentils are very soft, about 45 minutes.

    Drain through a fine-mesh sieve until mixture is thick but not dry.

    Place the lentils in a food processor.
