- 2 c. red lentils, rinsed well
- 4 c. water
- 1 large onion, diced
- 1 c. chopped mushrooms
- 1/2 c. walnuts, finely chopped
- 4 Tbsp. miso
- 2 Tbsp. tahini
- 3 Tbsp. minced scallions or chives
- 2 Tbsp. tamari
Directions

1Bring water to boil, add lentils and cook 10 minutes.

2Add onion and mushrooms, lower heat and cook 10 minutes.

3Add rest of ingredients, blend well and simmer for 5 to 10 minutes.

4Serve on rice cakes, pita bread, tortillas or dip into vegetables.

5Add more water as needed and cooking time may vary.

6Lentils should be soft enough to serve as dip.

7Makes 4 to 5 servings.
