  • 1 avocado
  • 1/2 cup roasted red pepper hummus
  • 1 eggplant
  • 4 slice mozzarella
  • 1 red pepper
  • 1 pinch basil
  • 1/3 cup olive oil

    preheat oven to 380

    scoop out avocado and smash or blend until soft

    combine avocado with hummus

    slice eggplant into four sections

    sprinkle basil on each section and brown on both sides in frying pan

    add chopped up red peppers to frying pan.

    add half of the olive oil.

    next, place eggplant and peppers into glass baking dish

    place sliced mozzarella on the eggplant and top with the sauce.

    add the rest of the oil and sprinkle more basil on top.

    bake for 45 minutes or until eggplant is soft
