- 1 avocado
- 1/2 cup roasted red pepper hummus
- 1 eggplant
- 4 slice mozzarella
- 1 red pepper
- 1 pinch basil
- 1/3 cup olive oil
Directions

1preheat oven to 380

2scoop out avocado and smash or blend until soft

3combine avocado with hummus

4slice eggplant into four sections

5sprinkle basil on each section and brown on both sides in frying pan

6add chopped up red peppers to frying pan.

7add half of the olive oil.

8next, place eggplant and peppers into glass baking dish

9place sliced mozzarella on the eggplant and top with the sauce.

10add the rest of the oil and sprinkle more basil on top.

11bake for 45 minutes or until eggplant is soft
