- 2 Tbsp. margarine
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 c. converted brand rice
- 1 (14 1/2 oz.) can tomatoes (undrained), cut up
- 1 1/2 c. chicken broth
- 1 tsp. salt (optional)
- 1/4 tsp. pepper
- 2 to 3 dashes hot pepper sauce
- 1 Tbsp. tomato paste
Directions

1Melt margarine in a 1 1/2-quart saucepan.

2Cook onion and green pepper in margarine until tender.

3Stir in rice; add remaining ingredients and blend lightly.

4Cover and bring to a boil, reduce heat and cook over low heat until rice is tender and all liquid is absorbed.

5Yields 4 servings.
