- 1/2 lb. lean bacon, cut into pieces
- 1 medium onion, chopped
- 1/2 bell pepper, chopped (optional)
- 1 (16 oz.) can stewed tomatoes or 2 (8 oz.) cans tomato sauce
- 1/4 tsp. oregano
- pinch of sugar, bay leaf, salt and pepper to taste
- 1 c. rice
Directions

1In a saucepan, cook bacon unti brown.

2Add onion and bell pepper.

3Cook until these are transparent.

4Add tomato choice, spices, bay leaf, sugar and simmer until bubbly.

5Add this mixture to the rice.

6(A rice steamer is the best cooker for this, but a large pot can be used.)

7Cook about 45 minutes, stirring well twice.

8Serve hot.
