- 3 strips crisp bacon
- 2 Tbsp. oil
- 1 small onion
- 1 small green pepper
- 1 can (16 oz.) tomatoes
- 1 clove garlic
- a little parsley
- a little pimiento
- 2 c. cooked rice
Directions

1Crumble bacon; set aside.

2In small skillet in 2 tablespoons oil, cook chopped onion, green pepper, tomatoes and garlic about 5 minutes or until onion and pepper are tender.

3Add with crumbled bacon, some chopped parsley and a few slivers pimiento to 2 cups hot cooked rice.

4Toss to blend well.
