  • 3 large ripe tomatoes, peeled, seeded and finely chopped
  • 1/2 c. finely chopped red onion
  • 1/4 c. chopped scallion
  • 1/4 c. chopped fresh cilantro
  • 2 tsp. minced serrano chile
  • 2 cloves garlic, peeled and chopped
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. olive oil
  • salt to taste

    Combine all ingredients in a nonreactive bowl and allow to marinate for at least 2 hours before serving.

    Taste and adjust seasonings with salt and additional lime juice.
