- 3 large ripe tomatoes, peeled, seeded and finely chopped
- 1/2 c. finely chopped red onion
- 1/4 c. chopped scallion
- 1/4 c. chopped fresh cilantro
- 2 tsp. minced serrano chile
- 2 cloves garlic, peeled and chopped
- 1 Tbsp. fresh lime juice
- 1 Tbsp. olive oil
- salt to taste
Directions

1Combine all ingredients in a nonreactive bowl and allow to marinate for at least 2 hours before serving.

2Taste and adjust seasonings with salt and additional lime juice.
