- 1/2 c. butter or margarine
- 1/2 c. Ricotta cheese
- 1 tsp. vanilla
- 1 c. sugar
- 1 egg
- 2 c. sifted all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Directions

1Preheat oven to 350°.

2Soften butter.

3Blend with Ricotta until creamy.

4Add vanilla and mix well.

5Add sugar gradually, beating until well blended.

6Add egg and mix well.
-
7Slowly stir in dry ingredients and blend well.

8Drop from a teaspoon onto lightly greased cookie sheet.

9Bake 10 minutes.

10Yields 30 to 36 cookies.
