- 2 tbsp olive oil
- 4 small carrots
- 3 beets
- 3 stalks of celery
- 1 Yukon gold potato
- 2 cloves of garlic
- 1 large yellow onion
- 1/2 can of corn
- 3 cups vegetable broth
- salt, pepper
Directions

1Chop all vegetables.

2Saute onions and garlic till soft...add carrots and celery, cook for a few minutes. Add potatoes and beets and broth. Bring to a boil, add corn. Cover and simmer until root vegetables are soft; Blend until soup retains a rich texture. Add salt & pepper to taste.
