  • 2 tbsp olive oil
  • 4 small carrots
  • 3 beets
  • 3 stalks of celery
  • 1 Yukon gold potato
  • 2 cloves of garlic
  • 1 large yellow onion
  • 1/2 can of corn
  • 3 cups vegetable broth
  • salt, pepper

    Chop all vegetables.

    Saute onions and garlic till soft...add carrots and celery, cook for a few minutes. Add potatoes and beets and broth. Bring to a boil, add corn. Cover and simmer until root vegetables are soft; Blend until soup retains a rich texture. Add salt & pepper to taste.
