Red Yam Flan

  • 2 or 3 red or yellow yams (to yield 1 1/2 c. puree)
  • 1 1/2 c. sugar
  • 3/4 c. water
  • 8 eggs
  • 2 egg yolks
  • 1 (14 oz.) can Eagle Brand sweetened condensed milk
  • 1 c. heavy cream
  • 1 c. half and half
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. each: ground cinnamon, allspice and nutmeg

Directions

    Preheat the oven to 325°.

    Scrub the yams and bake 1 to 1 1/2 hours, depending on size, until they are soft.

    Remove them from the oven.

    Peel, cut into chunks and puree in blender or food processor.

    You should have 1 1/2 cups; set aside to cool.
