Red Yam Flan

- 2 or 3 red or yellow yams (to yield 1 1/2 c. puree)
- 1 1/2 c. sugar
- 3/4 c. water
- 8 eggs
- 2 egg yolks
- 1 (14 oz.) can Eagle Brand sweetened condensed milk
- 1 c. heavy cream
- 1 c. half and half
- 1 1/2 tsp. vanilla extract
- 1/2 tsp. each: ground cinnamon, allspice and nutmeg
Directions

1Preheat the oven to 325°.

2Scrub the yams and bake 1 to 1 1/2 hours, depending on size, until they are soft.

3Remove them from the oven.

4Peel, cut into chunks and puree in blender or food processor.

5You should have 1 1/2 cups; set aside to cool.
