  • 8 to 10 filets red fish (trout or black drum may be used)
  • salt and pepper to taste
  • cayenne pepper fillets
  • 2 Tbsp. diced onion
  • 2 Tbsp. melted margarine
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1 can finely diced finely diced tomatoes
  • 1 tsp. dry or fresh parsley

Directions

    Sprinkle onions on fillets.

    Sprinkle margarine on fillets. Sprinkle lemon juice on fillets.

    Sprinkle Worcestershire sauce on fillets.

    Pour tomatoes over fillets.

    Cover with parsley.

    Bake at 400° for 35 to 40 minutes.

    Great served over a bed of rice, using sauce cooked in the pan.
