Reduced Calorie Bread Pudding

  • 8 slices whole wheat bread crumbled
  • 8 egg whites I used Egg Beaters whites from the carton; the amount depends on how moist you want it
  • 1 cup skim milk
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 1 tablespoon brown sugar
  • 2 tablespoons stevia
  • 1 teaspoon margarine melted
  • berries Preferred, if desired, I used blueberries
  • powdered sugar if desired

Directions

    Lay the crumbled bread in the bottom of a greased casserole dish. Size doesn't really matter; it'll just be puffy either way

    Add all ingredients in bowl except margarine and berries if you're using them. Whisk together.

    Pour mixture over bread, making sure to cover everything evenly.

    Squish the mixture in the dish together with your hands.

    Melt the margarine in a small bowl in the microwave for about 10 seconds. Time usually depends on your microwave.

    Pour the margarine over the mixture. Add your preferred berries to the mixture if using them. Squish together again.

    Bake for 55 minutes at 345 degrees Fahrenheit.

    Wait to cool and sprinkle powdered sugar on top if desired. Serve with low fat ice cream or whipped cream (or both!)
