  • 1 c. sugar
  • 1 c. margarine, softened
  • 2 1/4 c. flour
  • 1/2 tsp. baking soda
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. lemon rind, grated
  • 8 oz. low-fat peach yogurt

Directions

    Gradually beat sugar into margarine until mixture is light and fluffy.

    Add eggs one at a time beating after each addition. Combine flour and soda; add to creamed mixture.

    Stir in lemon rind, vanilla and yogurt.

    Pour batter into 10-inch Bundt pan coated with cooking spray.

    Bake at 350° for 1 hour or until toothpick inserted in cake comes out clean.

    Cool in pan for 15 minutes; remove from pan.
