- 1 c. sugar
- 1 c. margarine, softened
- 2 1/4 c. flour
- 1/2 tsp. baking soda
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. lemon rind, grated
- 8 oz. low-fat peach yogurt
Directions

1Gradually beat sugar into margarine until mixture is light and fluffy.

2Add eggs one at a time beating after each addition. Combine flour and soda; add to creamed mixture.

3Stir in lemon rind, vanilla and yogurt.

4Pour batter into 10-inch Bundt pan coated with cooking spray.

5Bake at 350° for 1 hour or until toothpick inserted in cake comes out clean.

6Cool in pan for 15 minutes; remove from pan.

7Serve with fresh fruit.
