  • 1 pound Dry Pinto Beans
  • 4 cloves Garlic
  • 1 teaspoon Dry Epazote or Oregano
  • 9 cups Cold Water
  • 1/2 cup Lard
  • 1 1/2 cups Diced Onion
  • 2 teaspoon Kosher Salt
  • 2 tablespoon Serrano Pepper Minced
  • 1 teaspoon Ground Chipotle

Directions

    Bring to a Boil, reduce to low, and Simmer first four ingredients for one and a half to two hours or until beans are very soft

    Melt Lard, add in onion and cook until translucent
  3. 3
    Add Serrano and Chipotle peppers and cook for one minute
  4. 4
    Add beans using slotted spoon (one spoon at a time) and mash the beans
  5. 5
    Keep adding beans and mashing them adding the reserved bean boiling water as needed to arrive at the desired consistency.
