- 1 pound Dry Pinto Beans
- 4 cloves Garlic
- 1 teaspoon Dry Epazote or Oregano
- 9 cups Cold Water
- 1/2 cup Lard
- 1 1/2 cups Diced Onion
- 2 teaspoon Kosher Salt
- 2 tablespoon Serrano Pepper Minced
- 1 teaspoon Ground Chipotle
Directions

1Bring to a Boil, reduce to low, and Simmer first four ingredients for one and a half to two hours or until beans are very soft

2Melt Lard, add in onion and cook until translucent

3Add Serrano and Chipotle peppers and cook for one minute

4Add beans using slotted spoon (one spoon at a time) and mash the beans

5Keep adding beans and mashing them adding the reserved bean boiling water as needed to arrive at the desired consistency.
