  • 2 cups pinto beans, dry
  • 6 cups water
  • 14 lb salt pork, dry
  • 2 tablespoons chili powder
  • 2 garlic cloves, minced
  • 18 teaspoon salt
  • 2 tablespoons oil

Directions

    Wash beans and place in water, Soak for several hours.

    Add Sliced salt pork.

    Place on stove top and bring to a boil.

    Lower heat and simmer until beans are tender.

    Mash beans until smooth.

    Add salt, garlic, chili powder, and cooking oil.

    Fry in a heavy frying pan over med heat until mixture is a smooth, thick mass.

    Serve with chips.

    For a zesty dip add 1 jalapeno ,not seeded, chopped fine, and added to the spice mixture.
