  • 5 lb. boiled potatoes
  • 1 stick butter or oleo
  • 6 oz. cream cheese
  • 2 Tbsp. chopped chives or 2 tsp. onion powder
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 to 1 3/4 c. milk

    Mash the potatoes, mixed with the other ingredients, until smooth and fluffy.

    Pour into lightly greased casserole; cover tightly and refrigerate for later use in planning a dinner when you need to save time.

    Will last up to 2 weeks in refrigerator.

    When ready to use, uncover, sprinkle top with paprika and dot with butter and bake, uncovered, for 45 minutes at 350°.
