  • 4 medium cucumbers, peeled and sliced
  • 1 1/4 tsp. salt
  • 1 1/4 c. sugar
  • 1 c. distilled white vinegar
  • 2 tsp. celery seed
  • 1 large green bell pepper, seeded and chopped
  • 1 medium onion, sliced

Directions

    In a colander, toss cucumbers and salt.

    Place colander in sink or bowl and let drain for 2 hours.

    Mix sugar, vinegar and celery seed in large bowl until sugar dissolves.

    Add cucumbers, bell pepper and onion; toss to mix.

    Spoon into clean jars.

    Cover and refrigerate for 24 hours before serving.

    Can be refrigerated for 4 months.
