  • 1 pkg. dry yeast
  • 1 c. potatoes (2 medium)
  • 1 c. potato water
  • 1/2 c. sugar
  • 2 eggs
  • 1 1/2 tsp. salt
  • 4 Tbsp. melted shortening
  • 1 c. lukewarm water
  • 9 c. flour

Directions

    Have potatoes creamed.

    Dissolve yeast in lukewarm water.

    Put 5 cups flour into large mixing bowl.

    Add sugar, salt, potatoes, potato water and melted shortening; stir well.

    Add eggs, then yeast and water.

    Add the remaining flour.

    Let stand at room temperature for 2 hours, or until double in bulk.

    Bake at 450° for 10 to 12 minutes, or until done.
