Ingredients
- 1 1/2 c. milk
- 1/3 c. sugar
- 1 Tbsp. salt
- 1/2 c. shortening
- 1 pkg. yeast
- 1/4 c. water
- 1 c. mashed potatoes
- 2 eggs
- 5 to 6 c. flour
Directions

1Scald milk.

2Stir in sugar, salt and shortening.

3Cool.

4Soften yeast in water.

5Add potatoes to milk.

6Mix. Add yeast and eggs. Add half of flour.

7Mix well.

8Add rest of flour.

9Knead until smooth.

10Place in greased bowl, brush with oil and cover with plastic wrap.

11Place in refrigerator at least 12 hours.

12Remove from fridge 3 to 4 hours before shaping.

13Shape.

14Let rise.

15Bake at 400° for 12 to 15 minutes.

16Makes 3 dozen rolls.
