  • 2 pkg. dry yeast
  • 2 c. warm water
  • 3/4 c. oil
  • 2 eggs, slightly beaten
  • 6 generous c. flour
  • 2 tsp. salt
  • 3/4 c. sugar
  • 1/2 stick butter
  • 1 1/2 c. sugar
  • 4 eggs
  • 1/2 tsp. vanilla
  • 2 oz. powdered milk (1 c. + 3 Tbsp.)
  • 1 1/4 oz. baking powder (2 Tbsp. + 1 tsp.)
  • 20 1/2 oz. cake flour (about 5 c.)
  • 11 1/2 oz. ice water (almost 1 1/2 c.)
  • pinch of salt
  • 2 1/2 c. blueberries

Directions

    Cream butter and sugar at medium speed until smooth.

    Add eggs and vanilla; beat for 5 minutes.

    Sift milk powder, baking powder and salt together.

    Add to mixture and beat 5 minutes.

    Add flour alternately with water, beating until smooth.

    Fold in blueberries by hand.

    Grease muffin tins lightly and flour.

    Fill about 2/3 full and bake at 350° until done, about 20 minutes.
