Ingredients

  • 14 to 16 oz. sauerkraut
  • 1/3 c. Thousand Island dressing
  • 1 can corned beef or luncheon meat
  • 1 (8 oz.) pkg. Swiss or Muenster cheese, sliced
  • 1/2 (8 oz.) loaf party rye slices
  • 1 Tbsp. oleo, melted
  • 1/2 tsp. ginger

Directions

    In a 9 x 13-inch baking dish, stir sauerkraut and its liquid, ginger and dressing. Spread out. Top with a layer of meat.

    Bake at 400° for 15 minutes. Remove from oven and place cheese on top of the meat in a single layer. Top with bread, lightly brushed with butter.

    Bake 10 minutes longer or until bread is crisp. Makes 8 servings.
