Reuben Panini

6 ingredients
14 steps

Ingredients

  • 4 Tablespoons Butter, Softened
  • 8 slices Rye Bread
  • 1 bottle Thousand Island Dressing (8 Oz. Bottle)
  • 8 slices Swiss Cheese
  • 1 can Sauerkraut (14.5 Oz. Can) Drained
  • 1/2 pounds Corned Beef, Thinly Sliced

Directions

  1. 1
It is a tradition in our home to make these every St. Pattys Day.
  2. 2
It is also great served with a big bowl of potato soup, and for those of you over 21, a bottle of Guinness finishes it off nicely!
  3. 3
Preheat the panini grill to high heat.
  4. 4
Spread butter onto all slices of bread.
  5. 5
Turn over the slices (non-buttered side up) and spread a layer of Thousand Island dressing on each slice.
  6. 6
Next thing you need to do is place a slice of Swiss cheese on each piece of bread.
  7. 7
Place a generous amount of sauerkraut (be sure to drain off as much liquid as possible) on what will be the top of each of your sandwiches, and a generous helping of corned beef on what will be the bottom.
  8. 8
Put all the top and bottom pieces together.
  9. 9
You should now have four individual sandwiches in front of you with the butter sides facing out (just like when you make a grilled cheese sandwich).
  10. 10
Grill sandwiches in batches of two for 5-6 minutes until cheese is melted and grill marks appear.
  11. 11
    Serve immediately and enjoy!
  12. 12
Note: if you do not have a panini grill, you can whip these puppies up in a pan.
  13. 13
The only variance with this in terms of preparation is that you should preheat a large skillet over medium heat.
  14. 14
Grill until golden brown, approximately 4 minutes per side.
