- 1 c. white stone-ground cornmeal or regular white cornmeal
- 1 c. sifted flour
- 1 tsp. salt
- 2 1/2 tsp. baking powder
- 1/4 c. sugar
- 1 c. milk
- 2 eggs, beaten
- 2 Tbsp. melted shortening or oil
Directions

1Preheat oven to 400°.

2Sift dry ingredients into mixing bowl. Combine milk with eggs and add to the dry ingredients.

3Add melted shortening or oil and stir until blended.

4Pour into greased muffin tins and bake for 20 minutes.
