Ingredients

  • 3 c. rhubarb
  • 1/2 c. sugar
  • 1/4 tsp. vanilla
  • 1 1/2 c. oats
  • 1 1/2 c. flour
  • 1 c. brown sugar
  • 2 sticks butter
  • 1/2 tsp. soda
  • 2 Tbsp. cornstarch
  • 1 c. water

    Cook first 3 ingredients, then set aside to cool.

    Combine next 5 and stir cornstarch with water and add to oat mixture. Pour 3/4 of this mixture into lightly greased 9 x 13-inch baking dish.

    Pour rhubarb on top, then put last 1/4 on top of rhubarb. Bake for 40 minutes at 350°.

    Good plain, or with ice cream or whipping cream, hot or cold.
